The Story Behind the Coffee:
This special comes from barista champion and 4th generation producer David Solano. It begins with the perfect selection of ripe red cherries from the highest lot on the farm. After washing and classification by density, they're placed in a 4,000lb capacity stainless steel tank retrofitted with a pressure release valve. Anaerobic maceration takes place between 60 - 70 hours. After fermentation, cherries are turned on shaded Camas Africanas for 25-28 days until the ideal humidity is reached. No yeasts or bacteria are added to this process.
This special natural-anaerobic processed Anacafe 14 variety tastes to us like merlot and candy: big aromatics, milky body, plum and raspberry cool boozy like an orange zested rum cake.
