The Story Behind the Coffee:
This coffee is from our importer Keffa. It is named after the rare wush wush coffee varietal that was first discovered in Ethiopia. Typically, coffee is fermented for up to 3 days after it’s picked. This coffee was fermented for 6 days. The extension of the fermentation process creates very unique and complex flavor notes. The combination of the extended fermentation and the natural processing method produce a coffee that is very fruity, floral, tea like and complex in the cup.
This coffee comes from the farm of Israel Degafa. Israel is the owner of the Kerchanshe Trading Company, the largest producer and exporter in Ethiopia. Local farmers registered with the trading company are taught how to improve coffee production practices. Better production means better quality coffee which will lead to a higher selling price. Israel sells all coffee well above the minimum rate that is set by the government. This ensures that all farmers are paid fair, livable wages. 10% of the profit from Kerchanshe is given to local nonprofits to benefit the community. These benefits include clean drinking water, electricity, the building of roads, and schooling for local children.
